Pumpkin Pancakes and Muffins

My client Jane getting creative with her breakfast meal. She made these into muffins and pancakes and said they were enjoyable and filling.

4 egg whites
1 yolk
270g pumpkin
cinnamon
1/2 fruit portion banana
1/2 fruit portion berries (on top)
1 Tbsp of pysullium husk

“Tried it as a pancake and also as a muffin – was really good and filling”
