Post-Workout Christmas Cookies

For some families, the holidays are a time to partake in creating fun treats with the kids. Just because you are following a diet plan does not mean that you have to miss out on the holiday festivities, you just may need to be more selective when it comes to indulgences. Post workout is a great time to enjoy a holiday treat, and these cookies are perfect for just that!

Chocolate Peppermint Cookies:
(these are a spin-off of the last PWO cookie recipe I posted)

– 1 box of chocolate cake mix (I used Betty Crocker – chocolate fudge)
– 1 8-oz container of fat-free whipped topping (I used Cool Whip, but if you are particular about chemicals you could always opt for a more natural brand)
– 1 tsp peppermint extract
– 10 peppermint candies, crushed

Mix peppermint extract and whipped topping. Add cake mix. Drop onto greased cookie sheet and bake for 10-12 minutes at 350 degrees (F). Top with crushed peppermint immediately after removing cookies from the oven. Enjoy!

*In order to figure the calories and carbs for an on-plan PWO treat, just separately add the total number of calories and carbs of your cake mix, whipped topping and peppermint candies, then divide by the number of cookies you make.
