On Plan Tostadas
Tonight I was having such a craving for Mexican food, so I improvised and made tostadas… on plan! It hit the spot!
My last meal of the day calls for Greek yogurt, oatmeal, and fruit (I had the fruit separate).
Kept the Greek yogurt but subbed out my oatmeal for corn tortillas and fat-free refried beans.
Toasted the corn tortillas under the broiler until crispy, then topped each with fat-free refried beans, Greek yogurt, diced jalapenos, and green salsa.
