On-Plan Egg Salad
Tonight’s dinner – egg salad sandwich with extra egg salad on the side! Talk about volume!
This was super easy to make, and also pretty tasty.
Ingredients:
1 egg yolk
6 egg whites, chopped into chunks (adjust amount to fit your plan)
20g of low-fat mayo (I subbed this in for my avocado)
10g stone ground mustard (or spicy mustard)
1/3 – 1/2 cup diced celery
1/4 cup diced green onions
1/8 tsp onion powder
1/8 tsp garlic powder
salt and pepper to taste
Directions:
In a large bowl, mash egg yolk with a fork. Add mayo, mustard, and seasonings. Stir well to combine.
Fold in celery, green onions, and egg whites. Taste and add more salt and/or pepper as needed.
This is great as a sandwich, wrap, or alone!
