Mini Potato Omelettes

Mini potato omelettes!

My meal calls for:
85g chicken breast
200g sweet potatoes
fibrous veggies

I subbed for:
247g liquid egg whites
210g hash browns

To make:
1) Preheat oven to 400 degrees. Add muffin cups AND spray with non-stick cooking spray (these are sticky).

2) Divide hash browns between muffin tins. Wtih a spoon, press potatoes down into bottom of tin. Bake for 10 minutes.

3) Remove potatoes from oven, and lower oven temp to 350 degrees. Top potatoes with veggies of your choice.

4) Pour eggs or egg whites over the veggies.

5) Bake for 20-25 minutes.

These are great because you can add many different ingredients to suit your taste: turkey bacon, cheese, turkey sausage, etc.

You could also bake this in a casserole dish instead of a muffin tin.
