Fricassee De Pollo (Chicken Stew)
A favorite out our house, especially on a cold night.
Ingredients
-Recaito can be store bought or make you own. (I prefer the freezer section vs shelf)
-Packet of Sazon Tropical (no msg)
-garlic/onion powder
-salt/pepper to taste
-chicken broth or water
-6-8 breast of chicken
Optional
-hot sauce or pepper if you like it hot. I add mine after the fact.
-white or brown rice cooked OR see below
How too:
in a 4 quart pot with lid, heat to medium heat.
Add:
1 serving size spoon of recaito and the packet of the sazon.
1 cup of water or chicken broth
‘saute’ for a few minutes. Tweak seasonings as need be.
Add:
chicken breasts. Cover and cook for about 20 min or so till tender. (cook a little less if using the Arroz con Pollo option below.
This can be served over white or brown rice or even use a bit of the juice and put over greens.
Optional Ideas after cooking chicken. You can turn this into:
-‘Red Rice’ – by removing the chicken and using the liquid too cook the rice in it (liquid to rice measure important here. You will need more water).
-Arroz con Pollo – by following ‘red rice’ and returning then returning the chicken back to the pot until the rice is done. (remember to reduce the cooking time of chicken above by a bit)
– Can be turned into ‘lazy rice’ by layering your rice/ chicken and adding some mozzerella cheese to the layer (and some on top). I normally do this for the boys as they arent fans of the stew. Bake till cheese is melted or cheat and use the micro (watch your settings)
