Cilantro Lime Chicken

Sundays in my house are spent watching football, so I love to make a healthy crockpot recipe for some fun game-day food. Today I’m making cilantro lime chicken. Here’s the recipe:

3-5 lbs boneless skinless chicken breasts
1-2 cups salsa
2 limes
1 packet of low-sodium taco seasoning
Fresh cilantro
Jalapenos (optional)
Banana peppers (optional)

1. Place chicken in crockpot and add juice from both limes, taco seasoning, and salsa (as well as jalapenos and banana peppers if you choose to add them). (save lime rinds for step 2!)

2. Tie or band cilantro together and drop on top of chicken along with lime halves.

3. Cook on low for 8-10 hours.

4. When tender enough to shred, remove lime halves and cilantro, and shred in pot using two forks.
