Cabbage Slaw for Fish Tacos

Some of you have asked for a slaw/cabbage recipe for the fish tacos I posted a few weeks ago, so here you are!
– 1 small jalapeño, thinly sliced
– 2 tbsp minced red onion
– 2 tbsp chopped cilantro
– 4 tbsp fresh lime juice
– 2 tbsp apple cider vinegar
– salt and freshly ground pepper to taste
– 1/2 small head of cabbage, shredded (approx 1-2 cups)
– 1 tbsp oil of your choice (I used extra virgin olive oil)
TO MAKE THE CABBAGE:
In a large bowl, toss the cabbage with 1 tablespoon of oil, 2 tablespoons of the lime juice and the apple cider vinegar. Season with salt and pepper.
TO MAKE THE CREAMY LIME GUAC:
– 1 medium avocado, halved, pitted and peeled
– 70g low-fat Greek yogurt
In a medium bowl, mash the avocados, Greek yogurt, jalapeño, red onion, cilantro and the remaining 2 tablespoons of the lime juice. Season the guacamole with salt and pepper and press a piece of plastic wrap directly onto the surface of the bowl.
