Breakfast Skillet Meal

‘Breakfast’ Skillet Meal. This was good and filling.

The empty bucket, aka my stomach, was pretty hungry today. I decided to sub out my chicken for egg whites and used red potatoes for my potato serving (volume!).

Potatoes
Egg whites
Some greens for color
Seasonings to taste

To prep the potatoes you can either lightly microwave them or dice/boil in some water in the microwave or stove top. Drain.

Add the potatoes to the pan and season. (I used Mrs Dash Onion and Herb, Sea Salt and lots of black pepper. )
Lightly brown potatoes.

I like the color so I added a handful of some greens- had kale/power greens on hand and then lightly ‘sauted’ them.

Add your egg whites and cook through.

I ate it right out of the skilet.
