Sweet Potato and Quinoa Cakes
2 cups cooked, peeled and then mashed sweet potato (I used Japanese sweet potatoes ~ they’re a little sweeter) 2 cups cooked quinoa, 1/4c plain bread crumbs, 2 egg whites, 1 tbsp garlic, pinch of sea salt and 1 tbsp thyme. Mix in a big bowl, mold into patties with your hands and brown until crispy in a pan that has been misted with spray or olive oil. I sprinkled a little cheese on top and it melted beautifully.
