An Oldie But Goodie-Protein Ice Cream
I figured that I would put up a recipe that I posted on LBF several months ago. It is my nightly dessert. Although typically I am not fond of cottage cheese, you would never know that my peanut butter ice cream is made with it. I even had my husband fooled. :lol: I typically make up a weeks worth of these at a time so I don't have to bother with the prep every night. I'm usually tired from a busy day and the last thing I want to do after put my kids to bed is make another meal.
Like I have mentioned before, I am all about volume or at least the appearance of it. The ice cream takes me a while to eat, so I always finish this meal feeling satisfied. I usually take it out of the freezer about an hour before I am planning on eating it. This way it is slightly thawed out. YUMMY!
Protein Ice Cream
My plan calls for:
100-125 grams of cottage cheese (changes based on day)
10-15 grams of peanut butter
1/2 scoop of protein powder- (you can add this into your ice cream however, I like to crumble it over the top)

Amy, does it seem watery when you pour it up? I just made a batch and I wasn't sure I did it quite right. I doubled the ingredients you have listed above and then filled with water but it looked really thin. Please let me know...I'm dying to try it but if I wait for it to freeze and it's no good because I did something wrong, I'll be sad. :(
Mine looked pretty thin too. The pudding mix (even just a little bit) will thicken it up.
Let them freeze and you'll be surprised how they turn out. ;)

I am reading your website from Iceland :) and I really like many of your ideas of how to get all this protein down without becoming boring. Since I dont have the same kind of blender as you use in your video, I would like to know the exact amount of water pr. 100-125 g. cottage cheese :)

Hi Asta,
I made one today to check it for you ;) When making one with 125g of cottage cheese, I added 90ml (grams) of water. So it was less than 1/2 cup. Don't worry about it looking too thin. Once mine froze up it was perfect.
