Crock-Pot Chicken
Today I’ll be keeping it short, as this isn’t technically a recipe, but instead a suggestion. ;) First off, you should know that I have this ‘relationship’ issue with chicken. :lol: I could eat chicken everyday no problem, and I never get tired of it. The problem is that in order for me to eat chicken everyday, I have to prepare it first. Here is where our relationship is rocky. I can’t touch raw chicken. As my husband as my witness, he knows to expect that I won’t touch the stuff uncooked. So when he is not around to help handle the raw chicken, I had to get creative in my ways of cooking. :D
This is just one way to make it really easy to prepare your chicken without it tasting like a dried out sponge. One great thing about this recipe, is that you do not need to defrost the chicken. I buy the large bags of frozen boneless skinless chicken breasts and tenderloins at Costco, and they are perfect for these kinds of recipes. There are basically 2 easy steps. Open bag of frozen chicken and dump it in the crock-pot. Next, pour half (or more) of the Hidden Valley Ranch Fiesta packet over the chicken and cover and cook. You do not need to add water. How easy was that!! I typically let mine cook low for 5-6 hours. Yesterday, I started mine around 2:00 in the afternoon and by the time 7:00 rolled around is was ready. I normally use the entire bag of chicken, so throughout the cooing time you may want to shift the chicken in the crock-pot around. I then usually cut or shred my chicken and weigh out my servings for the upcoming meals. Your family will love it too. It’s great in enchiladas, taco salads, etc.
