Cranberries!!

Lucky me, I stocked up on fresh cranberries this past November and froze them ;) If you weren’t so ‘lucky’ to remember to do so, you can check places like Whole Foods, Kroger, and some of the other upscale grocery stores for fresh cranberries. You get a lot of ‘bang’ for your ‘buck’. In dieting terms, you get a lot of volume without it costing you a lot in terms of carbs. One-half cup of cranberries (55g) is only 30 calories, and 7 grams of carbs! To make things even better, they are very strong in terms of flavor, so you really don’t need a lot to taste the cranberry flavor. I have been on a carb cycling diet these past few weeks, so I decided to see how I could make a low-carb breakfast using something sweet. Typically, I would have eggwhites with a tablespoon of salsa or maybe some mushrooms and spinach. And although I love my egg whites with salsa, I wanted something sweet. I made these cranberry orange zest muffins and they hit the spot! I swaped out my macros and this is what I came up with:

    Low-Carb Cranberry Orange-Zest Mini-Muffins

Ingredients 2 egg whites 20 grams vanilla protein powder 10 grams of chopped cranberries zested orange or a dash of orange flavored extract splenda or stevia optional

< Mix all ingredients with wisk and place in mini muffin pan. Bake at 400 for 6-8 minutes or until golden brown on tops.
