Football Foodies- The 7 Layer Dip

Oh how I love football season! There’s nothing like sitting in front of the TV in my Broncos jersey eating snacks while watching the game. If i were to consume what most of Americans eat during a game, I would need to have another wardrobe 4 sizes larger just for football season.

I try to stick to a veggie tray, baked nachos, shish-ka-bobs and chicken skewers when planning football parties.  This past weekend I made one of my favorite dips. Here’s the recipe.

Seven Layer Dip Recipe

1 – 16 oz can refried beans

1 8 oz container light sour cream

1 cup guacamole

1 cup of salsa

1 2.25 oz can black olives, chopped or sliced

1 – 1 oz package of taco seasoning

1/2 cup green onions, chopped

1 cup shredded Cheddar or Monterey Jack cheese (for gluten-free please use fresh shredded cheese.  Pre-shredded cheese often has gluten added to prevent caking)

*If using this recipe for a refeed, omit the guacamole and use a fat-free cheese.

Directions:

Spread refried beans on bottom of platter. In a small bowl mix taco seasonings and sour cream.  Spread mixture over the refried beand.  Next, layer guacamole followed by the salsa.  Top off with Cheddar cheese, chopped olives, and green onions.  Serve with baked tortilla chips. Yummy!
