Adding ‘Substance’ To The Carb-Less Pancake

Yeah, yeah, yeah….I’m sure you are getting sick of hearing about my love for pumpkin. Too bad!! :p It’s just crazy to think that I hate pumpkin pie, yet I make so many other things with canned pumpkin.

Today is no different. My husband requested my low carb pumpkin pancakes but with more carbs. LOL At first I told him that I did not comprehend. But he then explained that he likes his pancakes to have a little more ‘substance’. So in other words…BRING ON THE OATS. Did I mention that he still wanted to have a bowl of oatmeal with his pancakes? Boy he is getting demanding!! :lol:

Being the mad scientist that I am, :lol: I found a way to make it for me too!!

My plan calls for:

6 Egg Whites

40 g old fashion oats

70g blueberries

293 cals           3.6 fat              38.6 carbs        27.1 protein

Here is what I did to match my amounts above:

Silver Dollar Pancakes

10g old fashion oats (just enough to give ‘substance’)

15g protein powder ( I used unflavoured buybulkwhey)

45g pumpkin

3 egg whites

2g sugar free cheesecake pudding mix

Stevia and cinnamon optional

Did I mention that it made SIX pancakes? :D

This still left me room for:

A Big Bowl of Oatmeal

30 g old fashion oats

45g strawberries

296 cals           4.5 fat              37.1 carbs        28.4 protein



Wow, I’m full. I need a nap. :p
