Breakfast On-The-Go
Being a military wife, I have become a ‘single mom’ for half of our marriage. You are probably wondering what that has to do with breakfast on-the-go right? Well, if you are anything like me, kids come first which leaves me last. I find that if I am not prepared and manage my time, cooking things like my eggs and oatmeal in addition to having time to eat them becomes nearly impossible. Or at least it seems that way. :mad:
Portability
I seem to be on the go a lot when Kevin leaves for deployment. And of course it starts first thing in the morning when I take the kids to school. Have you ever tried eating your eggs or oatmeal while driving? :shock: Not an easy task. :lol: There are days when I know I need to make something that is portable and preferably fit in my purse. :wink: Here is just one example of what I have done on these days.
My Original Plan
My plan calls for 40g oatmeal, 6 eggwhites, and 35g berries. Now I could always make a mini loaf, but I wanted to have a pancake. I have really become addicted to these GINORMOUS pancakes. :mrgreen: And who wouldn’t want a cookie for breakfast? Cookies and pancakes for breakfast sounded like a plan to me. :cool:
Banana Raisin Oatmeal Cookie
Ingredients
25 g old fashion oats
15 g vanilla pp
10g raisins
2 g sugar free fat-free banana pudding mix
Optional splenda/stevia
4-6 Tbsp water (this will vary based on your preference)Directions
ï In a 14 oz Ziploc reusable bowl, combine all ingredients and mix with fork
ï Smooth mixture over bottom of container.
ï Cook in Microwave at 60% for 1:20 (time may vary with different microwaves) If you prefer it more on the crunchy side, flip cookie and then cook additional 20 seconds on full power.Nutritional Information:

Chocolate Banana Mini-Flapjack
Ingredients
10g old fashion oats
10 g vanilla pp (or your flavor choice)
1 egg white
2 g sugar free fat-free banana pudding mix
Optional splenda/stevia
1-2 Tbsp Davinciís sugar free syrup (toptional)Directions
ï Combine all ingredients and mix thoroughly.
ï Place on skillet on med/high heat.
ï When ëmixí starts to bubble, flip and cook other side.Nutritional Information:
Calories: 101 Fat: 1.5 g Carbs: 9.5 g Protein: 12.6
I was able to eat all of this and match my macros nearly perfect. :grin: These are just a few of many recipes that can be prepped ahead of time for those times of need.
