Pumpkin pancakes

A client of mine was perusing the recipe section on the LBC website and asked for my help to make one work with her meal plan. She wanted to try the “Pumpkin Pancakes” recipe. When I looked at the recipe, I was like, “Oh this sounds good.” So I helped her make it work for her plan and then did the same for myself. It was definitely worth the effort. Here’s what you need to make it:

3 egg whites
15g Trutein vanilla
30g old fashion oats
60g canned pumpkin
2-3g sugar-free, fat-free cheesecake pudding mix
1 dash of cinnamon and pumpkin pie spice
splenda or stevia to taste (optional)

I used a Magic Bullet and blended all the ingredients together. Then fried the ingredients in a pan at a low setting. Yep, pretty easy.

This will give you around 25g of protein, 30g of carbs, 3.5g of fat for around 250 calories. Obviously, you play around with the ingredients to make the calories and macros work better for your needs. As mentioned, it was definitely worth the effort as this tasted great.
