Protein Peanut Butter and Banana Crepes

Protein Peanut Butter and Banana Crepes

These are SO good.

My meal calls for:
25g Trutein (protein powder) (subbed out half of this for liquid egg whites)
1 serving of fruit (banana)
25g peanut butter

I also added:
1 packet of Stevia
1 tsp cinnamon
sugar-free syrup

Mix protein powder (saving a very small amount to sprinkle over the finished crepes), Stevia, and cinnamon. Blend or whisk egg whites into protein powder mixture. Heat a non stick pan on medium heat, and coat lightly with cooking spray (I use Spectrum coconut oil spray).

Pour 1/3 of the batter into the pan, while swirling the pan to make sure that the egg mixture evenly coats the bottom of the pan. Cook for approx 30 seconds, then flip and cook the other side.

Repeat this two more times with the rest of the batter.

Add sliced banana to the top of each crepe.

In a small bowl, mix together the peanut butter and sugar-free syrup and then drizzle the mixture over the banana.

Fold each crepe and top with a sprinkle of the remaining protein powder.
