Beans In My Cookies!!
I know what you are thinking. Beans in cookies? Ewwww. I was so skeptical when I walked by my T.V. and saw Rocco making these cookies on Dr. Oz. Of course, what really interested me was the fact that they were 45 calories per cookie!!! For someone that loves volume, my ears perked up and my belly growled. LOL
Here is the recipe:

Preheat the oven to 375°F. Line 2 baking sheets with parchment paper and spray lightly with cooking spray. Set aside.
In the bowl of a food processor, combine vanilla, cocoa, cannellini beans, and the agave syrup, and blend the mixture until smooth, about 3 minutes, scraping down the side of the bowl halfway through blending.
In the bowl of a mixer fitted with a whip attachment, beat the egg whites until they form soft peaks. Gradually beat in the Splenda. Continue to beat the whites until they are creamy and nearly stiff. Add one-third of the egg-white mixture to the cocoa-bean mixture in the food processor. Blend to combine, about 30 seconds. In 2 batches, fold the lightened cocoa mixture into the egg whites until they are almost fully combined. Add cacao nibs to the batter. Fold batter until cacao beans are evenly dispersed and cocoa mixture is completely incorporated.
Drop mounded spoonfuls of batter onto the prepared sheets. Spread butter out to form cookies about 2 1/2 inches in diameter. Sprinkle the chocolate chips on top of the cookies.
Bake for 16 minutes, rotating the pans one turn halfway through baking. Move to cooling rack and serve.
Makes about 20 cookies.

Next time I will use stevia and even add in some scoops of chocolate protein powder. We really liked these and will make them again!!

Wow! What a great idea! LOL! I NEVER thought of this and I am a vegetarian so I have to say I am a bit bemused. Can't wait to try this out! Any idea whether you can sub other beans like black beans or adzuki beans? Also I am curious what the agave is for. You are using splenda so is it that the splenda doesn't make it sweet enough or does it have some other properties that are needed here? I like butterscotch so I think I am going to omit the chocolate stuff and add butterscotch chips.

Sounds interesting! I think I will try to make these though because they sound yummy and healthy. 45 Calories a cookie is near insanity! Love the pic of the kids too:)
I can't wait to try these!!!! I am a cookie freak! I have the greatest recipe that uses walnuts pan roasted in chili oil that gets dropped into a peanut butter recipe. I truly LOVE cookies!
Pam, I love adzuki beans!! We are going to try some recipes with it. Growing up in Hawaii, they put adzuki beans with ice cream and shave ice!! Sounds strange, but so yummy.
As far as the agave goes, I am not sure on the answer to your question, but I know it does have different properties in it. I think next time I will omit it and see what the change is. I wanted to try the recipe as close as possible the first time and then go from there. I will say, for 45 calories, these are very delicious!!

Danielle- I am interested to try your recipe. I am sure they are heavenly. I wouldn't call these to die for, but when dieting, they sure do taste that way. ;)
